Resumo

Brazil is a major global producer of highly perishable foods, however faces serious problems regarding transport, storage and conservation of these foods, it lacks the development and efficient drying processes of research that minimize losses and increase the life shelf various products. Dehydration has major advantages compared to other drying methods have low cost, and economically feasible. However, many dryers currently used have large heat losses and do not operate in ideal conditions for minimizing energy consumption during drying. Therefore, we built a convective electric dryer cabin type, with internal structure of wood and insulation glass wool (to increase thermal efficiency) and coated internally and externally with steel plates. Tests carried out since the beginning of the dryer operation has shown that the mass flow of the air dryer operating suggested in the literature, is not appropriate and that the thermal efficiency and the drying device may increase. In this sense, it is proposed in this paper, the realization of a maximization experimental study of the efficiency of the dryer as a function of the flow variation and the air temperature inside the device. For drying bricks was obtained thermal efficiency and maximum drying procedure is done at a temperature of approximately 63°C and the speed of entry into the dryer is about 2.5 m/s. In this procedure the drying performance of the bricks was 11.4% becoming the most economic option dryer use.
